Lottie Shaw’s Seriously Good Yorkshire Parkin is a sticky ginger cake baked with a blend of oatmeal, syrup, black treacle and ginger to a family recipe handed down through generations. The treacle caramelizes as it bakes, and each cake is rested before leaving the bakery so the caramel softens.
Enjoy this 325g cake with strawberries and cream in summer, with stewed fruit and hot custard in winter, or simply buttered any time. It is a traditional Bonfire Night favorite in Yorkshire.
